Ingredients
  1. 1 1/2 cups bread crumbs*
  2. 1/2 cup flour
  3. 2 whole eggs
  4. 2 packages of goat cheese
  5. 1 box of arugula**
  6. 8-10 strawberries
  7. Pecans
  8. Olive oil
  9. Balsamic glaze
  10. Salt & pepper
Prepare 3 separate bowls
  1. Mix the eggs with 2 Tbs of water in the first bowl;
  2. Place the flour is the second;
  3. Place the crumbs in the third;
  4. Slice the goat cheese into 8 even pieces***
  5. Dunk each slice of cheese into the flour, shaking off the excess, and then into the egg mixture. Finally, dunk the cheese into the breadcrumbs, ensuring that all sides are covered.
  6. Heat some olive oil in a pan over medium heat. Once the pan is hot, add 4 slices of goat cheese at a time and fry each side for about 45 seconds, or until golden. Place on a paper towel-lined plate and begin preparing the salad.
  7. Slice up the strawberries into 2 or 4 pieces. Place about a handful of arugula onto each plate, sprinkling the strawberries and pecans on top. Slip the cheese onto the the plates and drizzle some olive oil and balsamic glaze over the salad and add some salt & pepper to taste.
Notes
  1. *switch it up by grinding up some pretzels, crackers, or even cookies to use as the crust!
  2. **try something a little different or fairy tale-like, such as mâche (also known as rapunzel!)
  3. ***refrigerate the cheese for 20 minutes before slicing
